Easy Gumbo Recipe

If you've never made gumbo before, then this easy gumbo recipe will help you start making gumbo quickly. Gumbo is an almost soup-like substance that typically consists of some sort of meat (chicken, sausage, shrimp, etc.) with sauce or soup, served over rice. This dish is popular in some southern states, especially Louisiana.

Here's a very simple and easy to make gumbo recipe that you can start out with, and build upon as you become more experienced...

Quick And Easy Gumbo Recipe Yield: 1 serving

Ingredients:
1 c Frozen okra
1 cn (15 or 16-oz) chicken broth
1 cn Campbell's chicken gumbo-soup

Put in saucepan and simmer together a few minutes until okra is thawed and tender. Serve over rice. There is some rice in the chicken gumbo soup, but I usually fix extra in the electric rice cooker.

When we have fresh okra, I fix it the way my mother-in-law always did. I slice it thin and stir-fry it in a little vegetable oil for about 10 minutes or until all the "slippery stuff" is fried out of it and it is tender. I don't bread it. If it isn't tender enough by the time it is dried out, I put it in the oven for a few minutes at 350 degrees to finish it off.

That's a very simple recipe. As you become more experienced at making gumbo, you can add more seasonings and meats to improve the taste. And if your goal is to make an authentic Louisiana style gumbo, then you'll want to make your own roux.

Here is a second recipe that is also fairly easy to make, but it requires more time and work than the previous one. It's a bit more flavorful, though.

Quick Creole Gumbo Recipe Yield: 1 Servings
Preparation time: 15 minutes
Cooking time: 10 minutes
Yield: 4 servings

Ingredients:
1 tb Olive oil or vegetable oil
1 md Onion; diced
1 Each: small red and green bell pepper, diced
4 oz Chicken andouille sausage, sliced
1 cn (14 1/2 ounces) diced tomatoes
2 cn (14 1/2 ounces each) chicken broth
1/2 c Instant rice
1 ts Creole seasoning blend (up to 2)
1/4 ts Each; or to taste: red and black pepper
Salt to taste
1/2 lb Cooked frozen medium shrimp

1. Heat oil in a large saucepan over medium-high heat. Add onion, bell peppers and sausage. Cook, stirring often, until sausage begins to brown, 4 to 5 minutes.

2. Add tomatoes with their liquid, broth, rice and seasonings. Heat to boil; reduce heat and simmer 5 minutes, adding shrimp about halfway through. Adjust seasoning and serve hot.
